Jennifer Tan is the second generation 'hawker' of the much-loved Melakan establishment - Donald & Lily Nyonya Food (@Bendahari), whose laksa is a well-known pitstop for discerning locals, and visitors from afar. We are so happy to have her back again to bring more dishes to us. 

In this class, Chef Jennifer will be reprising her pop-up menu that was recently offered in Singapore. For those of us who could not get a seat, this is your chance to taste and learn how to make these delicious heritage dishes. 

Menu

1. Ikan Kuah Lada (Fish in Peppery Gravy) 

A heritage Peranakan fish dish that is rich with fresh spices, savoury, tangy and bursting with peppery flavors. It is best with white rice or even dipped with you tiao (fried fritters)! However, this is no longer commonly found in nyonya restaurants these day. Chef Jennifer serves this is her private dining menu, so we will be the lucky ones who can learn how to make this dish! 

2. Kerabu Beehoon Udang (Herbed Vermicelli with Prawns)

Kerabu beehoon is a vibrant, colorful, tangy dish tossed and mixed with local fresh herbs and sambal belacan. Refreshing yet complex in its taste profile. It is often served chilled or at room temperature . This well-known Peranakan dish has its roots in the mixed heritage of the Malay Chinese and Thai. 

3. Sotong Sumbat Soup 

A comforting dish mostly cooked and eaten at home by the Peranakans, yet it is not often made because it is a labour of love to make these delicious stuffed squids with a flavor bursting pork filling. In this class, it will be cooked with tanghoon (glass noodles) and  bamboo shoots to complete the dish as a truly comforting bowl of goodness.

Take Home Items

Food samples will be packed for onsite participants or delivered to ZOOM participants at no extra cost.
