1. Fujian Popiah
This is a unique version of popiah hailing form Xiamen, is a family recipe from chef Shih Erh. It is NOT your regular popiah because the juicy, moist vegetable filling has such a robust yet balanced taste from the slow stewing. A unique feature is the addition of umami savory seaweed that complements the other raw crunchy fresh vegetables. This very delicious popiah offers such a delightful contrast of flavors that your guests will be set to go for seconds and thirds. It is also a refreshing change from the rich and meaty CNY dishes. Note that the skin will not be made from scratch.
2. Pineapple Rice with Waxed Meat (Ong Lai Lap Mei Fun)
Here is a modern way to prepare waxed meat rice! This auspicious rice dish served in a pineapple (which symbolises ushering in of prosperity and abundance) is a must since CNY feasting is not complete without carbs. The sweet tang of the pineapple complements the savory waxed meats perfectly, creating a satisfying, hearty combination.
3. Chinese Three Treasure Desserts
A velvety, smooth and light dessert for a lovely finish in any kind of festive occasions. It has all the health benefits from peach gum(桃胶), gum tragacath (雪燕) and snow lotus (雪莲子). This dessert treat embodies harmony and sweetness which are cherished elements of the Chinese New Year tradition.
