Hi babi! Christopher’s new recipes for these lavish Peranakan-style pork dishes will make you the life of any party.

Menu

1. Babi Panggang with Sambal Kuakchye
Nyonya-style roast pork with spiced meat and crispy crackling, served with pickled mustard greens to complement the meat’s richness. Learn how to make this iconic but rarely-seen dish in the oven or in the airfryer.


2. Sayur Sumbat Masak Lemak
Yong Tau Fu with a scrumptious Nyonya-style upgrade! Tauhu triangles, sweet capsicum and bittergourd pieces stuffed with minced pork and prawns, pan-fried and braised in a rich and spicy coconut milk gravy.


3. One-Pot Babi Asam
A real rice-killer of a dish made straightforwardly in a single pot. Pork shoulder and belly slow-cooked with a fragrant and complex rempah, taucheo, tamarind and palm sugar until the meat is lusciously tender and bathed in a thick glaze.


4. Pong Tahu Soup
Soft and velvety pork, prawn and beancurd meatballs, poached in a robust prawn, crab and pork broth with bamboo shoots.
