Have you ever wanted to bake up crunchy-crisp, butter-scented sugee cookies? Look no further! Learn Christopher’s fundamental techniques and tips for turning out classic plain sugee biskut, and how to change up the ingredients to get three scrumptious variations.
1. Classic Sugee Cookies
Very buttery and lightly infused with vanilla, these cookies can be shaped as plain rounds or embossed with a decorative cookie press. A timeless favourite.
2. Matcha Sugee Cookies
Very aromatic and a forest-green colour thanks to Japanese uji matcha powder, whose light bitterness complements the rich sugee dough extremely well.
3. Pistachio & Semolina Sugee Cookies
A sugee version of classic Middle Eastern cookies called barazek, these crisp, fragrant wafers have two faces – one side studded with pistachio nuts, the other side coated with toasted sesame seeds.
4. Hae Bee Hiam Sugee Cookies
Sakura ebi, Thai lime leaf and spices make these savoury sugee cookies incredibly moreish and a surprising contrast to their sweet siblings.
