1. Pumpkin Cranberry Pecan Loaf
A low-sugar and high-yumminess fruitcake which gets its hearty, satisfying texture and full-on flavour from roasted pumpkin puree, dried cranberries, pecans and coconut. Moist and moreish.
2. Rum Raisin Almond Butter Cake
A simple to make yet very elegant cake whose butter-rich crumb is infused with citrus zest and studded with rum-soaked raisins. Wonderful for afternoon tea.
3. Steamed Chocolate Fruitcake
If you find regular fruitcake too sweet, this recipe is for you. A classic steamed fruitcake laden with brandy-kissed dried fruits, with extra sophistication and bittersweet charm from premium cocoa powder and a touch of dark caramel.
