Biryani is brought to India by invading Islamic armies and over time it became part of the cuisine of India. Pork is forbidden in Islam. Muslims use beef in biryani and the Hindus use mutton, goat meat, chicken meat, eggs or vegetables to make biryani.  Biryani is usually served on festive occasions or mark a celebration.

Pork is not a common ingredient in most Indian cuisine, but it is widely consumed in the states of Goa, Kerala and Karnataka – as well as in Northeast India, bordering China and Myanmar.  As Chef Devagi is highlighting unique flavours from the bar scenes of Kerala and Pork Loin Biryani is certainly in the limelight!  Check out these tasty, rustic dishes!

1. Pork Biryani 

The taste of these marinated and slow cooked pork pieces explodes in your mouth and awakes every taste bud. There is no stopping after one mouthful of briyani!

2. Country Style Chilli Beef 

The toddy shops in Kerala certainly have a way of preparing spicy beef in a thick and heavenly tasting gravy, of just the right consistency that coats the meat, giving it a delectable flavour. Check out the texture of the rich tasting coconut strips in the dish!

3. Spicy Pot Roasted Prawns 

The traditional aroma of coconut oil mixed with the garlic and curry leaves makes this dish a memorable one long after dinner is over! 

4. Mango Curry

Chunky unripe mango pieces simmered in creamy, spicy coconut milk curry. It is rich and flavourful, leaving you totally satisfied!
