In our fast-paced, fast food world, we must seize those magic moments to share special and meaningful meals with our loved ones. Baba Jerry and Nyonya Su Pei have spent many years collecting recipes which our mothers, grandmas and great-grandmas kept at the back of kitchen drawers, saved in personal recipe boxes or painstakingly jotted in notebooks, to share with their daughters. More than just heritage food, these heirloom dishes preserve our memories and connections to people. In this class, Su Pei will share some treasures from her trove.
1) Mouthwatering Chicken In Chilli Oil: chicken pieces poached until soft, moist and silky, dressed with a hot and zingy infused oil, chopped fresh coriander, spring onions, peanuts, and toasted sesame seeds. An addictive, palate-awakening dish that improves in flavour as it stands.
2) Sweet & Savoury Braised Duck: this delicious duck dish by Nyonya Su Pei is a gem of her family, slow-cooked with an array of sweet spices and seasonings which build an aromatic flavour bridge between China and Southeast Asia. Spooned over hot rice, its rich and luscious gravy will win the hearts of everyone at home.
3) Spicy And Sour Fish Soup: more subtle and delicate than regular hot and sour soup, this light and appetising sour broth features super tender fish slices and pickled mustard greens for a piquant and zesty taste. A great dinner dish that you will find really comforting and satisfying on a cool evening.
