1. Braised Beef Cheek Noodles

Beef cheek braised Hong Kong-style with rice wine, ginger and other aromatics until falling-apart tender, and served with its rich juices over egg wanton noodles tossed with spring onion oil.

2. Dan Dan Mian

A Sichuan classic of la mian noodles dressed with minced pork, preserved vegetables and a zingy sauce, addictively invigorated with freshly ground roasted black sesame seeds and home-made chilli oil infused with Sichuan peppercorns and dried chillies.

3. Scallop Shui Gao Mein

Succulent dumplings stuffed with a scallop and prawn filling, poached and served in a light broth with springy egg wanton noodles.

Participants will sample on all the demonstrated items.
