In this class, we are so happy to have Chef Valerie Kong share her knowledge and experience in sourdough baking. Chef Kong founded Urban Loaf Factory in 2018 to serve the community with her very unique version of sourdough bread that has a characteristic thin, crispy crust and a soft crumb. Her sourdough is also known to be less tangy and choke-ful of ingredients. All these characteristics make her brand of sourdough very popular for families with young children and elderly.

In this introductory class, we will be focusing on the basic building blocks of making sourdough like the maintaining of a starter, proportion of water to flour, knowledge on kneading, proofing, scoring and finally baking the dough. To master the whole process would have taken a novice much trial and error, but with a veteran baker and experienced teacher to guide, this process will be assuredly rewarding and satisfying.

This hands-on class will cover:

  1. Bakers’ percentage and language.
  2. How to feed and maintain a strong starter.
  3. How to plan your schedule for sourdough baking.
  4. Hands-on session on making your very own sourdough using a mixer.
  5. Get a taste of the loaf that you will be baking.
  6. Tips on flavour combinations.


Hands on with demonstration by Chef with videos and photos snippets sent via WhatApp. Recipes will be emailed ahead for ZOOM participants.
