Chef Devagi Sanmugam takes us on a fascinating journey to Pondicherry, India to explore French culinary influences in the cuisine. She will share a bit of history; a bit of culinary traditions and how French cuisine became entwined with local ingredients in Pondicherry and then she will share some intriguing recipes.


1. Cassoulet De Fruits De Mer

The equivalent of the French Bouillabaisse, this rich seafood stew of prawns, fish, squids, and scallops are cooked with Vadavom Spice Mix (French Masala that originated in Pondicherry which you will learn to make) and laced with coconut cream.

2. Indian Inspired Ratatouille 

The classic Provencal ratatouille has a touch of the Indian spices that includes the traditional tempering technique.

3. Smoked Paprika Lamb Chops

Succulent lamb chops with a spicy, smoky marinade. 

4. Saffron & Cardamom Creme Brûlée

An Indian inspired French classic dessert loaded with warm delicate flavors of saffron and cardamoms. Be swooned by the delicious aroma of caramelized jaggery and sugar!


Online demonstration via ZOOM by Chef, facilitated by TKS. Class size of up to 15 participants.
Take Home Items

Participants will be given a recipe pack ahead of class via email/post and a sampling size of all the demonstrated food to be collected on site after the class. 
Delivery can be arranged at a separate charge.
