Nyonya Nasi Lemak

A sublime and scrumptious celebration of aromatic rice served with vibrantly spicy side dishes and condiments to complement the rich grains, Nasi Lemak is the de facto national dish of Malaysia – and Nyonya nasi lemak is also one of Baba Jerry’s signature specialties! Join him, Nyonya Su Pei and Baba Christopher for a nasi lemak spread enlivened with their stories, tips and unique touches.

Baba Jerry:

1) Nasi Lemak

The foundation recipe of rice steamed with coconut milk and pandan leaves until fluffy, tender and fragrant. Learn how to make sure your nasi comes out right every time, how to wrap it in banana leaves for a classic presentation, and how to compose a selection of accompaniments and sides to best show off the rice.

2) Sambal Kang Hoo Kia

A spicy-sweet sambal prepared from scratch with chilies, garlic, shallots and other ingredients, combined with freshly-fried crispy anchovies.

3) Nyonya Assam Heh

An emblematic Peranakan dish cooked in different ways by all the different Peranakan communities, these tangy tamarind prawns are boldly seasoned to complement the natural sweetness of fresh shellfish.

Baba Christopher:

4) Ayam Panggang Manis Pedas

Chicken bathed with a finger-licking blend of palm sugar, smoked paprika and spices, oven-roasted until succulent and sticky.

5) Sotong Masak Hitam

A traditional homestyle Nyonya dish of fresh squid cooked with its own ink and a citrusy, aromatic rempah.

6) Tumis Tempeh Wangi

An Indonesian-style dish of tempeh (pressed soybean cake) cubes stir-fried with kecap manis and fragrant herbs.
