Macau’s rich history has given it a fascinatingly complex Eurasian cuisine, blending Portuguese and Cantonese ingredients and techiques with touches from Malay, Indian, African, Japanese and British cultures. In this new and exciting class, explore Macanese flavours through its classic meat dishes with Christopher’s straightforward recipes.

1. Pork Chop Buns

Tender pan-fried pork chops nestled in papo secos, crusty-soft Portuguese buns, these are absolutely iconic Macanese snacks. Learn how to make the buns from scratch with an easy dough that rises in the fridge, and how to season, marinate and cook the pork chops for delicious results.

2. African Chicken

A blend of taste nuances from former Portuguese colonies across several continents, from South America to Africa to Asia: chicken marinated with paprika, herbs and spices, roasted and finally braised in a rich, potent coconut milk and capsicum sauce – good to the last drop.

3. Almondegas (Macanese Meatballs)

Beef and pork meatballs seasoned with a unique and very moreish combination of olives, cheese and herbs, breadcrumbed and pan-fried until golden. Perfect for picnics, potlucks and anytime snacking.

4. Balichão (Shrimp Paste Condiment)

This soulful seasoning is central to traditional Macanese cuisine, and is classically made from krill shellfish, salted and fermented with brandy, spices and lemon. Learn how to steep cincaluk (salted krill sauce) with aromatics to make an easy, very fragrant version of balichão with Christopher’s special recipe.

5. Porco Tamarinho (Macanese Babi Assam)

Pork shoulder braised with balichão, tamarind juice and soy sauce until succulent and cloaked in a deeply savoury gravy. This must-have Macau dish is quite different from local Peranakan babi assam, and a real ‘rice killer’!
