Chef Damian, widely regarded as a championer of local heritage cuisine has a burning passion to re-introduce and pass down forgotten recipes to preserve Singapore's culinary legacy for the future.
In this brand new series, he will be focusing on sharing the dishes across all ethnicities, making every component from scratch, using lesser known ingredients like how it used to be in our grandparents' generation.
Menu
1. Ayam Kalasan Goreng
An Indonesian dish that probably originated in West Java but was popularised in Yogyakarta. The chicken is braised in coconut water and spices till tender and then deep fried upon order.
It has a light distinct flavour from the spices and coconut water, and is best eaten with a simple salad.
2. Botok Udang
Like our beloved otah otah, Botok is also wrapped in banana leaf with a spice blend and shredded coconut. Instead of grilling the finish product, the botok is steamed.
The finished product has a light but savoury flavour from the spices and the fresh lemon basil.
3. White Jackfruit Curry
Another dish originating from Indonesia. This is the "white" version as opposed to the dark brown version which is drier, almost like a "rendang".
The dish is simmered in coconut till it becomes soft and luscious and the fruit has absorbed all the flavours in the pot. It always best to eat this dish with fried chicken.
