The latest in Christopher’s kueh series features more of his original recipes celebrating cassava (tapioca), a traditional and favouite kueh ingredient across our corner of the globe. Learn how to handle, grate and use fresh cassava and make the most of its soft, delicate taste and texture.


1. Cassava Taro Kueh
The love child of orh nee and soft tapioca cake, this is inspired by Teochew and Thai flavours. A sticky, bouncy steamed kueh laden with grated cassava and taro, rolled in fresh grated coconut, roasted sesame seeds and golden fried shallots, with a sweet-salty-nutty flavour.

2. Lempeng Ubi Kayu Jagung
If you like classic tapioca kueh bingka, you’ll enjoy these stovetop pancakes, which have the same golden crust and springy, gooey insides, with the addition of juicy fresh sweetcorn kernels and corn puree. Easy to make and great for teatime.

3. Bingka Ubi Kayu Bijan Keju
An intriguing and unusual contrast in colour, flavour and texture, this baked kueh has a fudgy bottom layer of cassava infused with ground black sesame seeds and black sesame paste, covered with a top layer of smooth and creamy cheesecake.

Take Home Items

Onsite participants will bring home a set of food samples. ZOOM participants WITH food samples can opt for self-collection or delivery at no extra cost.
