A generous measure of tradition plus a dash of creativity and a sprinkle of innovation equals delicious results! Christopher’s latest recipes put a fresh new spin on favourite kuehs.


1. Kanom Chan Bai Toey

This is the Thai version of our steamed lapis (kueh lapis kukus), springy-succulent, rich with coconut milk, and perfumed with lime leaves and pandan. Instead of a rainbow, learn how to tint the batter purely with fresh pandan juice – no artificial colour! – and graduate the layers for a modern ‘ombre’ effect.

2. Orh Nee Kueh Koo

Not ‘ang’, but naturally purple from purple sweet potato, these soft kueh koo are stuffed with a smooth and luscious Teochew-inspired orh nee filling, steamed taro pudding enriched with lard, coconut milk and fried shallots.

3. Kueh Bengka Ubi Jagung

Fresh sweetcorn kernels and corn juice make this baked tapioca kueh extra velvety, sticky, and popping with natural sweetness and crunch. A glazing of butter gives its golden crust fragrance and shine.

Take Home Items

Onsite participants will bring home a set of food samples. ZOOM participants WITH food samples can opt for self-collection or delivery at no extra cost.
