A staple of Indonesian cooking, kecap manis has many applications in the Asian kitchen. But did you know you can easily make it yourself? Learn how to prepare a soulful home-made kecap manis with much more character than anything store-bought, and how to put it to good use in some yummy recipes.  

Menu

1.  Home Made Kecap Manis

Infused with coconut palm sugar and a blend of several fresh herbs and dry spices, this supremely versatile condiment is a seasoning you’ll want to have on hand all the time. Best kept in the fridge for everyday use.

2. Sate Ayam Madura

Kecap manis goes into the marinade for this tender chicken satay as well as the accompanying creamy peanut sauce. Surprisingly straightforward to make, and savoury-sweet but not chilli-hot, this dish is suitable for all the family.

3. Babi Tomat

Pork braised with tomatoes and kecap manis until aromatic and sweetly succulent, this is the kind of stew whose flavour improves the second day. Equally good with hot steamed rice or bread.

4. Perkedel Tempe with Sambal Kecap

Spicy tempe, potato and vegetable balls, deep-fried until golden and served with a thick, spicy and zingy chilli, lime and kecap manis sambal.
