The latest in Christopher’s ongoing series of heritage baking classes. Learn how to make Singapore-style and Penang-style tau sar piah (bean paste pastries) completely from scratch, with traditional and contemporary twists. These recipes use only natural ingredients and are free from hydrogenated fat, artificial flavours and colours.

Menu

1. Foundation Tau Sar Piah Pastry
A traditional Chinese two-dough pastry made with butter and lard, this bakes up into wafer-thin flaky layers. An easy and straightforward pastry to master.


2. Classic Tau Sar Piah
This piah’s smooth mung bean filling is sweet – but not too sweet, thanks to unrefined sugar – with a hint of savouriness from fried shallots and toasted sesame seeds
 

3. Black Sesame Tau Sar Piah
Black sesame paste gives this piah’s filling deep and earthy flavour and fragrance, as well as a dramatically dark appearance.


4. Penang Hae Bee Hiam Tambun Pneah
Popularised in recent years, this spicy hae bee hiam variation of the traditional Penang pastry – smaller, fatter and rounder than Singaporean piah – blends mung beans with a spicy, punchy dried shrimp sambal for a marvellously moreish filing.

Take Home Items

Onsite participants will bring home a set of food samples. ZOOM participants WITH food samples can opt for self-collection or delivery at no extra cost.
