In this part of the world Buah Keluak is also known or regarded as the truffle of the East or black gold, with its distinctive umami flavor. In this class, Chef Damian will be bringing us through the whole process of preparing, cooking and savouring this smokey, prized delicacy.

1. Sambal Buah Keluak
The classic Peranakan dish of keluak meat and minced pork cooked with wet spices and enhanced with coconut milk. It's rich and earthy flavour is a rare treat for keluak lovers that enjoy the bittersweet umami-ness of the dish.
2. Sambal Buah Keluak Fried Rice
Chef Damian's Buah Keluak Fried rice is famously delicious. It was first created when Chef was helming The Soul Kitchen in 2002 when he wanted to execute a fried rice that exalted Singapore's Heritage Cuisine. Truly, he has created a version that re-defines what this dish is all about.
3. Sambal Belimbing
Belimbing is a sour, juicy fruit that pairs beautifully with a spicy sambal. This simple a refreshing dish is a perfect complement to the rich buah keluak notes, cleansing the palate to go for more helpings!
