In this menu by Chef Damian, we take a peek into his home kitchen as he re-visits some of the older, unique recipes that he used to enjoy in his growing up years.
1. Ikan Surani
This old traditional dish is quite forgotten perhaps due to its laborious attention to detail. It contains a paste but most of the work lies in the meticulously sliced ingredients. This dish is usually cooked with baby threadfin making it robust but blissful at the same time.
2. Buah Keluak with Chicken and Pork Ribs
The Peranakan dish that almost every non-Peranakan knows! There are numerous versions of this dish. This particular one uses pork ribs and chicken to exalt an otherwise humble dish, in fact, this rendition makes the chicken only version pale in comparison. Come and find out the "secret" ingredient that goes into the keluak meat!
3. Pulot Hitam
Chef adds a Peranakan touch to this all time favourite dessert. The additional texture and sweetness, from the dried longans gives it such an interesting mouth feel. Combined with a slightly salty coconut cream, this classic dessert is now transformed into a decadent, heavenly top lister in the charts of local desserts!
