1. Hokkien Rice Dumpling (Bak Zhang)
A very popular and well-known bak zhang. The unique feature of this rice dumpling is the frying of the glutinous rice in dark soy sauce before being wrapped in lotus leaves together with ingredients, such as pork belly, chestnuts, salted egg yolk, mushrooms and dried shrimps.
2. Cantonese Rice Dumpling (广东碌豆咸肉粽)
The filling of this dumpling comprises of mung bean, salted pork jowl and salted egg yolk, giving it a creamy, juicy yet nutty taste profile. Not usually sold commercially, this unique 'five cornered' zhang (五角粽 is also wrapped differently.
3. Kee Zhang with Gula Melaka syrup (碱水粽)
Growing up, this is easily every child's favourite rice dumpling. Made with plain alkaline glutinous rice, it has a distinctive alkaline taste that goes so well with a sweet fragrant gula melaka, kaya or just plain sugar.
