1. Lychee Strawberry Fraiser

This Fraiser is no ordinary one. Introducing various techniques, Chef Wang will demonstrate the many applications of the basic custard sauce in French desserts namely in a cream mouseline, cream diplomate and a chiboust.
Then using a golden ratio, he will mix in fresh strawberries to assemble a fraiser. 
Elements of the fraiser include: 

- Custard Sauce Base
- Soft Almond Sponge Cake
- Classic Meringue
- Pistachio Chiboust
- Raspberry Jelly

2. Low Sugar Valrhona Rum Raisin Dacquoise

This dessert deliberately cuts back on the use of sugar. Chef will use a technique to ensure that the meringue does not deflate despite the reduction of sugar. Find out the science behind this technique. 

3. Classic Matcha Canele

In the making of caneles, many would encounter problems like caneles getting stuck in the mold, the center not baked through or over-baked,  
Chef Wang is here to answer all your questions! He will share the importance of mixing a good batter and how to prepare the molds for a first time use.
