Chef Jeffery Pan is back with more delicious and decadent pastries! Building from the cake techniques learnt in his last lesson, he introduces a very light mousse cake, as well as, a rich and flavorful fruit cake.
1. Tropical Mousse Cake
A show-stopping mousse cake with a light almond biscuit base, fragrant lychee mousse and mango, passion fruit filling, finished with a sunny yellow chocolate glaze. Master the special techniques in making a delicious mousse and making a perfect glaze.
2. Rum Dundee Cake
A rich and delicious fruit cake with Scottish origins. Chef Pan's version is packed with the goodness of dried raisins, apricots, cranberries, figs and walnuts. A room temperature cake that is lovely for tea parties.
Demonstration by Chef.
Participants will sample on all the demonstrated items.
