Audra Morriceis no stranger to many as judge and host ofMasterChef Singapore. In hernew cookbook Cook and Feast, she celebrates the “feast” and shares recipes that tap into her Chinese Indian heritage, inspirations from other cultures, her travels and her food obsessions. She takes a sustainable and healthy approach to cooking with simple vegetables and grains and their possibilities to be the centrepiece at a feast. Spiced Smoked Eggplant with Grated Coconut - Hands down, one of Audra's favourite dishes in her new cookbook! She shows you how to create a perfectly charred eggplant, creating a canvas for an incredible coconut masala, made with fragrant tempered Indian spices cooked with fresh aromatics and freshly grated coconut.
3. Black Rice, Fruits, Nuts and Herb Salad With Orange and Pomegranate Molasses Vinaigrette
Black rice is known to have numerous nourishing qualities and specially kept for the Chinese emperors in the 17th century to promote good health and long life. This is amongst a few recipes in Audra's cookbook that features black rice as the hero of the dish. The key is in cooking the rice well!
4. Coconut Pandan Crepes with Gula Melaka & Coconut Pandan Cream
Gula Melaka and Coconut Pandan Cream - if you missed Audra's recent Four Hands dinner with Malcolm Lee at Candlenut where this dessert left everyone speechless with familiar flavours of comfort but presented nothing like the original, you now get to see how it's done! This is Audra's take on kueh dada. Delicious fragrant crepes filled with grated coconut gently cooked in gula-Melaka and coconut pandan cream.
