Audra Morrice is no stranger to many as judge and host of MasterChef Singapore. In her newcookbook Cook and Feast, she celebrates the “feast” and shares recipes that taps into her Chinese Indian heritage, inspirations from other cultures, her travels and her food obsessions. Shetakes a sustainable and healthy approach to cooking with simple vegetables and grains and their possibilities to be the centrepiece at a feast. 1. Beef Carpaccio with Pickled Onions

Traditionally an Italian dish, Audra presents a refined yet rustic version of this dish with a plethora of Asian flavours. She shares the importance of sourcing fresh and sustainable meat produce and shows easy practical techniques in cooking this dish as well as how it can be taken up a notch to be presented at a dinner party. This dish isdeliciously fresh, herbaceous and a feast for the eyes.

2. Audra’s Tauhu Goreng

Everyone should know how to make a good peanut sauce. We serve this with satay in Singapore but truly it is one of the most versatile sauces. Audra shares how to achieve a balanced yet complex sauce and what it can do to the simplest of dishes.

3. Spiced Rice, Eggplant and Zucchini Masala in Filo Pastry

This is a celebratory dish, totally inspired by thepastilla, a Moroccan pie. Audra brings her Indian heritage into this dish with the use of fragrant spices and fresh herbs and champions the humble vegetables. She showcases important techniques in tempering spices, obtaining balance of flavours and introduces cooking methodologies to bring the best out of simple vegetables. Spiced rice and lentils layered with a charred eggplant and zucchini masala, wrapped in filo, baked to golden perfection then dusted with cinnamon and icing sugar. This dish is worthy of a grand spot on the dinner table with its sheer extravagance along with its complex flavours, one for the next dinner party!
