This Christmas, instead of pulling out your turkey baster, why not change up a little just for fun? Come and be inspired by Audra's refreshing, yet practical festive ideas.

1. Glorious Fish Pie
The best fish pie isn’t smothered in heavy cream sauce, but instead, fresh fish is cooked with an assortment of fresh vegetables in a light delicious white sauce, then perfectly crowned with homemade rough puff pastry. You will be taught how best to laminate the pastry resulting in a multitude of layers when the pastry is baked.
2. Shredded Cabbage Salad with Audra’s “Asian Dukkah”
The sweetness of cabbage is often taken for granted. Cabbage makes the most delicious salad and is a great accompaniment to many dishes, absolutely perfect for that Christmas spread. We will show you how best to achieve a beautifully refined salad and top it with a most delicious “asian dukkah” a version featured in Audra’s cookbook Cook & Feast.
3. Calamansi Curd TartLemon tart is one of Audra's favourite tarts. In this local twist, she will be using her signature shortcrust pastry made from scratch topped with a silky, zesty tangy calamansi curd. All you will need with that is some seasonal berries made into a compote.
