We have learnt from Chef Devagi that you can practically do biryani with any kind of meat, even though each type will require a different cooking method and marinade. We have been asked to repeat the last mutton biryani class, so here we are with another mutton biryani but in a different form!

Did you know that minced mutton meatball briyani has been there for centuries? Only in the royal families cooked and ate them in the past. The meat used to be hand minced by a butcher who would be specially invited to the palace to do just that.

These days, the minced mutton balls briyani is only sold in some fine dining restaurants. So here is a chance to not only learn to cook but savour the tender-umami rich meatballs buried in the aromatic, long grain basmati rice. Surprise your family and guests with a royal dish.

Whether you know how to make a regular briyani or not, you should attend this class and have a ball of a time!


1. Chettinad Mutton Balls Dum Biryani 

Minced meatballs layered with rice and drizzled with a saffron-milk, aromatics, and nuts. The minced mutton balls are a burst of flavours and textures in your mouth! You will learn how to make the Chettinad Spice Powder that has an array of 15 types of spices carefully selected and blended in perfect harmony to get the right flavor and stand apart from other spice blends. And you are not restricted to use this in Indian cuisine alone!

 2. Mutton Dalcha 

Mutton Dalcha is a meat stew made with lentils, vegetables like moringa and tamarind. The meat will just fall off the bones and you can be sure that this version will be one the best that you can find in town. 

3. Green Papaya Chutney

The humble green unripe papaya is turned into a flamboyant, hot, spicy and sweet chutney as a perfect accompaniment not only for briyani or Indian food but for your sandwiches, porridge and anything that needs a bit of oomph.
