Back by popular demand, Christopher’s Lapis Surabaya class will teach you all you need to know to make this favourite and decadent cake at home – plus other dependable recipes to keep in your back pocket.

1. Lapis Surabaya
This classic three-layered Indonesian cake, also known as spiku or spikoe Surabaya, is distinguished by a fluffy yet velvety texture thanks to generous amounts of butter, eggs and egg yolks. Unlike many commercial versions, Christopher’s recipe is not too sweet, and only uses all-natural ingredients – absolutely no margarine or artificial emulsifiers or flavourings.   


2. Quick Raspberry Jam
A fruit conserve to sandwich your Lapis Surabaya layers together, tart and refreshing to counter the richness of the cake.


3. White Coconut & Rum Pound Cake
What do you do with all the egg whites left over from baking Lapis Surabaya? You make this delicious yolk-free pound cake, of course! In classic American style, it has a sturdy golden crust and a buttery, tender, melt-in-the-mouth crumb flecked with grated coconut, all scented with a whisper of rum and vanilla.

 
4. Kue Mangkok Pandan
Springy and soft steamed cupcakes fragrant from fresh pandan juice, a retro teatime treat which can be enjoyed with many different accompaniments – salted grated coconut and palm sugar, or sambal hay bee, or soft cheese, or simply salted butter. Another recipe to help you use up extra egg whites.

Onsite participants will bring home a set of food samples. ZOOM participants WITH food samples can opt for self-collection or delivery at no extra cost.
