Where modern desserts are often all about deconstruction, classic and timeless desserts are more about building flavour combinations so logical and harmonious that the whole becomes more than the sum of its parts. These soulful and satisfying European recipes are no exception.

1) Black Forest Cake

Traditional German Schwarzwalder Kirschtorte has elements so perfectly suited to each other that their combination cannot be improved on. Light chocolate sponge cake is layered with kirsch-spiked cherries, uber-thick whipped cream and shaved dark chocolate for an elegantly juicy, boozy, fluffy symphony.

2) Basque Burnt Cheesecake

There’s a good reason for the widespread popularity of this Catalan-style dessert – its creamy intensity is a superbly pure incarnation of cheesecake. Infused with honey and orange zest, Christopher’s version is smooth and rich but not too sweet, and easy to make – no mixer needed.

3) Danish Butter Cookies

Everyone’s childhood go-to snack. These buttery, sugar-topped, crunchy-crumbly biscuits will transport you back to yesteryear. Also, learn how to vary their shape and flavour so that you can fill your own round tin with assorted memories!
