1. Shio Koji Luncheon Meat
The flavour-multiplying powers of shio koji allow you to make your own juicy, delicious luncheon meat with fresh pork and zero artificial additives – incomparably better than commercial versions.
2. Pork a la Shiok
Christopher’s family recipe for a dry sambal babi of cubed pork slow-fried with a fragrant and fiery rempah until glazed and aromatic. Savoury, spicy and rich, this dish keeps very well and works wonders in a sandwich or on top of hot rice.
3. Rebong Masak Lemak Pie
A classic Peranakan dish of succulent bamboo shoots cooked with pork ribs in a rich and spicy coconut milk gravy, transformed into a pot pie with a golden lid of butter and lard shortcrust pastry, baked separately for maximum flakiness.
