In this new series by Chef Shih Erh, we will be focusing on the creative use of ingredients with common southeast asian spices and herbs to bring to you dishes that taste largely familiar, yet having refreshing tweaks for a more complex flavor profile. 


1. Kerabu Ambarella

Ambarella is also known as Kedongdong or Buah Long Long, which is a fruit found in many parts of South-east Asia. Known for its many outstanding health benefits, this fruit is also a perfect addition to asian salads (Kerabu). Learn how to pair this fruit with other ingredients to create a very piquant appetiser for the start of a meal.

2. Ayam Kapitan

Also known as Curry Kapitan, this chicken curry is characterized by the use of many spices and herbs like lemongrass, galanghal, turmeric, belacan, kaffir lime leaves. The chicken pieces are first fried before adding into the rempah. Unlike a regular curry, the gravy is thicker, often coating the chicken pieces, making each bite a sheer juicy delight.  

3. Four Heavenly Kings (Sambal Assorted Vegetables with Prawns)

A stir-fried vegetable dish using four different types of vegetables (long beans, brinjals, petai, ladies' fingers) flavored with a special sambal. Chef Shih Erh's creation has additional ingredients like prawns to make this dish even more mouth-watering. 

4. Blue Pea Spiced Rice

Rice steamed with the juice of blue pea flowers and aromatic spices is what we need to complete the whole menu. 


Demonstration by Chef with videos and photos snippets sent via WhatApp. Recipes will be emailed ahead for ZOOM participants. 

Take Home Items

Food samples will be packed for onsite participants and delivered to ZOOM participants at no extra cost.
