Jennifer Tan is the second generation 'hawker' of the much-loved Melakan establishment - Donald & Lily Nyonya Food (@Bendahari), whose laksa is a well-known pitstop for discerning locals, and visitors from afar.

In this class, we will be learning the foundation of making a rempah (spice paste), in particular Jennifer's family’s heirloom rempah that is used to make the famous Donald & Lily laksa which has amassed a following not just in Malaysia but also in other parts of Southeast Asia. 

In addition, you will also learn the versatility of this rempah by learning how to make  two other dishes with it. 

Menu

1. Laksa Nyonya/ Laksa Lemak

Donald & Lily's famous laksa. A thick, hearty, coconut broth-based gravy with thick or thin vermicelli noodles, tofu puffs, prawns, fish cake and a dollop of sambal tumis.

2. Otak-Otak 

Using the same base, this toothsome otak-otak is baked or grilled to perfection, or simply steamed.

3. Keluak Pie Tee 

A new creative twist on run-of-the-mill top hat fillings, Jennifer uses the same rempah to mix with the flesh of buah keluak (Pangium edule) into a paste which can be used to fill pie tees or fried with rice or noodles for a simple yet flavourful meal.

Demonstration by Chef with videos and photos snippets sent via WhatApp. Recipes will be emailed ahead for ZOOM participants. 

Take Home Items

Food samples will be packed for onsite participants or delivered to ZOOM participants at no extra cost. 

Participants will be able to purchase Jennifer’s rempah which has been pre-packaged for convenience and palm sugar which has been carefully sourced by her from Jawa.
