We are bringing back Christopher's popular Thai curry series! Here is one of the most popular Thai genres: green curry. Characterised by intensely fresh and herbal notes, with plenty of heat from green chillies, balanced by coconut cream and fish sauce, green curry is a perfect foil for many kinds of main ingredients.

1) Fresh Green Curry Paste
A foundation spice paste for green curry, with green chillies, lemongrass, galangal and other ingredients.

2) Green Curry Chicken with Thai Brinjals
A classic curry featuring tender chicken, different varieties of eggplant, and plenty of aromatics – not overly sweet, as is so often the case, but properly rich, hot, and savoury.

3) Green Curry Fried Rice with Seafood & Green Peppercorns
Prawns and squid, piquant fresh green peppercorns, and Thai sweet basil leaves join forces with green curry paste to elevate fried rice to a new plane.

4) Green Curry Puffs
In Thailand, one variation of green curry is traditionally cooked with beef chunks. This take on it uses minced beef instead, to make a delightfully fragrant filling for puff-pastry curry puffs.
