We are honoured to host this cooking session with Chef Audra Morrice who is most popularly known as one of the judges of Masterchef Singapore.
In this class, we will be delving deep into the finer points of making great pastry in your home kitchen. Whilst there are only a few ingredients that go into making shortcrust pastry, to make a good one requires some knowledge, skill and common sense. Pastry recipes used in different parts of the world needs to be adapted in different environments. One with high fat content is much easier to manage in cold climates than in warmer climates so adaption is required. Learn how to adapt and manage pastries with a few simple rules and techniques. You will also learn to make the most delicious sweet and savoury items using filo pastry when time is short. These two forms of pastries is a canvas for numerous fillings!
1. Apple Pie

Learn to make shortcrust pastry from scratch and the most delicious apple filling, then finishing with a decorative top to cover.
2. Pear & Frangipane Tart
This visually outstanding tart is always a winner. Learn to make a sweet shortcrust and fluffy almond filling with juicy thinly sliced fresh pears.
3. Bougatsa - Sweet & Savory
(i) Sweet- Parcels of vanilla semolina custard wrapped in filo pastry layered with cinnamon and sugar.
(ii) Savory - Delicious savory light tart shells with filo pastry ready to be filled with a delicious savoury mix.
Demonstration by Chef with videos and photos snippets sent via WhatApp. Recipes will be emailed ahead for ZOOM participants.
