Who doesn’t love dumplings? Almost every culture has their version, but in this class, we will be making 3 different types of Northern Chinese style dumplings. You learn about different wrappers, wrapping techniques, fillings and accompanying sauces. This is just in time for Chinese New Year when dumplings are eaten as a symbolic food. Their shape resembles ancient Chinese money (silver ingots) and therefore represent wealth. Legend has it that the more dumplings you eat during the New Year celebrations, the more money you can make in the New Year! Guests will get to taste the end result as well, so join us for some dumpling fun!

1. Pork Dumplings (Jiao Zi)*

Pork and vegetable dumpling with spicy dipping sauce

Symbolic foods are a large part of Chinese New Year. Fish is eaten, because the Chinese word for fish “yu” sounds the same word as abundance. Jiaozi, a boiled dumpling, are eaten for the New Year because their shape harks back to ancient Chinese money, gold and silver ingots to be exact. Another reason is that the words Jiaozi literally means to sleep together and have sons, a much-desired fate amongst Chinese. As Vivian's dad hails from the Shandong province in Northern China, she is particularly fond of dumplings, a staple of this region. So here she will share her recipe for this New Year’s treat.

2. Pan-fried fish dumplings (Guo Tie)

Pan-fried dumplings wrapped with fish meat & chives and a soy dipping sauce.

For those who are looking for an alternative dumpling recipe, these dumplings are filled with the elements of the classic Chinese steamed fish. Because this dough filling is light in colour, it is sometimes made in a jade green dough with spinach for a pretty and delicious treat.

3. Steamed Veggie Dumplings (Zheng Jiao)

Steamed dumplings with vegetables and chinese salsa verde.

If you have a vegetarian in your life to feed or just want to eat less meat (without sacrificing flavour), this recipe fits the bill perfectly. A recipe gleaned from many sessions with a favourite aunt, these are so good they would make you almost want to skip the meat ones. Filled with nutritious and tasty ingredients, they are accompanied by a killer sauce.

4. Mandarin Cake

A simple sweet and citrusy mandarin cake as a perfect dessert. 

Mandarins and their cousins, oranges, tangerines etc. are traditional symbols of abundance and good fortune during Chinese New Year. This dessert is a delightful and simple use of these lucky ingredients. Plus it’s gluten-free for those who are fussed and keeps very well, tasting even better the next day.
