These Indonesian and Malay desserts are part cake, part kueh, and all scrumptious! Learn how to whip up these timeless favourites with Christopher’s recipes.
1. Bolu Sarang Semut
The classic ‘ants nest’ or ‘honeycomb’ bolu, threaded with air pockets for an open, springy texture. Also known as kek gula hangus, it has a dark shine and deep, complex flavour from caramelised sugar and butter. No oven is needed for this all-time great.
2. Bolu Makassar
A tender, open-crumbed sponge cake traditional to Sulawesi in East Indonesia. Its gentle, rounded sweetness comes courtesy of palm sugar, and its aroma from a custom blend of fragrant spices such as cinnamon, clove and nutmeg. The perfect partner for a cup of tea or coffee.
3. Bolu Tapai Ubi
Known as bolu tape singkong in Indonesia, this rich and velvety butter cake is laced with tapai ubi kayu, sweet and fragrant fermented cassava, which gives it a unique scent and a fine-grained softness.
