Some favourite Asian desserts are completely worth saving up all your calorie budgets for – learn how to make three outstandingly decadent, subtle and sophisticated treats in Christopher’s latest class.
Menu
1. Cendol (Fresh Pandan Jellied Noodles in Coconut Milk with Gula Melaka Syrup)
The favourite dessert-slash-drink, traditional to Indonesia but also made in different forms around the SE Asian region. Mix up, cook and press out a pandan-fragrant batter – only juice from 2 varieties of pandan, no artificial flavouring or colouring! – into soft and springy noodles, then serve them in chilled coconut milk with a drizzle of thick coconut palm sugar syrup.
2. Min Jiang Kueh with Orh Nee, Peanut & Sesame
A classic Southern Chinese pancake (also known as apam balik or martabak manis) filled with Teochew-style orh nee (sweet taro paste, made with freshly steamed taro), roasted peanuts and toasted sesame seeds. A delicious symphony of textures and flavours – springy, smooth, velvety, crunchy and chewy.
3. Thai-style Sticky Rice with Durian Custard
Glutinous rice steeped in seasoned coconut milk until rich and fragrant, served with scoops of a silky ‘sangkhaya’ made with eggs, coconut milk, palm sugar and durian puree. Simply irresistible!
