Chef Ratha from The Black Sheep Cafe is here to teach and share his signature dishes for the first time! Not constrained by the rules of classic French food, Chef Ratha jazzes up his dishes with Asian ingredients in just the right way to wow his audience. Making these modern French dishes easy to replicate at home is one of Chef's priorities.  


1. Baked Brie with Macadamia Nuts Served with Pear & Pineapple Chutney

One of the café’s best selling starters. You will be taught how to coat the cheese, dress it and bake it. Accompanying it is a delicious pear & pineapple chutney that can be used with several serving ideas. 

2. Escargot Baked in Mushroom with Garlic Herb Butter

Escargot made easy with a home-made garlic herb butter and mushrooms to accentuate this well-loved side. 

3. Beef Cheeks in Red Wine.

A classic dish that is tried and tested in a home kitchen with important techniques of marinating and braising, then served with a hearty French begedil (potato cutlet) and oven-glazed carrots. 

4. Grand Marnier Souffle

The cafe's most popular and famous dessert served with caramelised orange & vanilla bean ice cream. Learn a fail-proof way to make your souffle stand tall and proud.
