As the year-end and year-beginning festivities approach, it’s time to break out the butter and whip up special-occasion cakes! Christopher’s all-new recipes will satisfy your cravings for a bit of seasonal decadence.

1. Prune Lapis Gulung

Lush and buttery without being too sweet or too cloying, this is a winningly easy recipe for prune lapis fans – make one layer and roll it up, instead of slaving over several! The succulent dried plums are cradled in smooth, soft-crumbed cake, aromatic with lapis spices and a touch of brandy.

2. Almond, Pineapple & Spiced Rum Pound Cake

Pineapple pieces are steeped in rum with sweet spices, then folded into a luscious batter laden with almonds and butter, before the whole is baked to golden completion. All the flavours of kueh tart, in a warm and welcoming cake.

3. Gula Melaka Kaya Koningskroon

Inspired by a Dutch ‘king’s crown’ butter cake traditionally layered with jam, this tall confection replaces the jam with fragrant kaya and adds a generous amount of gula melaka to the cake batter, for a melt-in-the-mouth result – truly fit for a king.
