Over the past decade, Christopher has taught many banana desserts – just not all at the same time! If you’re bored with standard banana cakes, join him for his a-peeling all-new banana creations, and learn how to bring out the most flavour and fragrance from this favourite fruit with tips, techniques and taste combinations.
1) Banana Chiffon Cake with Strawberry Cream
Light and airy but deeply banana-y chiffon cake layers, sandwiched with strawberry-infused whipped cream and slices of seasonal local pisang varieties. A blend of soft, springy and silky textures.
2) Double Chocolate & Banana Loaf
Don’t judge it by its brownie-like looks – this is a full-on banana cake, its fruitiness balanced with dark chocolate chips and Valrhona cocoa powder. Fudgy, satisfying and not too sweet.
3) Banana, Passionfruit & Coconut Bundt Cake
A terrifically tropical party bundt laden with bananas, fresh passionfruit pulp and grated coconut, with a sticky and fragrant crumb under a chewy golden crust.
4) Lemon-Lime Banana Bars
Adding ripe bananas and a touch of kaffir lime to the mix makes these citrus curd bars extra luscious and aromatic, and also more tangy and less sweet than bakery versions
