Food pickling is an ancient technique that is used in many international cultures including here in Asia. Beyond food preservation, pickling food alters its taste and and texture in delightful ways. In this very special class, Chef Damian will be bringing us on a journey of hands-on pickling, focussing primarily on the skills and techniques that are passed down from the past generations.
1. Traditional Sour Vegetable Achar
2. Dried Green Papaya with Dried Shrimps Stuffed in Green Chillies
3. Salted Fish & Fish Roe Pickle
4. Seasonal Fruit Pickle
Demonstration by Chef / Instructor & hands-on by participants.
* This class will be conducted over 2 consecutive Sundays. Attendance for BOTH days is required.
