If you’ve ever struggled to master flaky shortcrust pastry, or have been saddled with the dreaded soggy bottom, fret no more! Christopher’s new class will teach you how to make and bake delicious pie pastry, and to use it in a trio of pies and tarts laden with local flavours.


1. Foundation Flaky Pie Dough

Here’s what you need to make this supremely flaky, multi-purpose, all-butter pastry dough; flour, butter, a food processor, a freezer, and less than 15 minutes of active time. Here’s what you don’t need: messy butter blocks, complicated folding, nervous kneading and stress. No joke – this easy recipe gives you maximum results for minimal effort.
2. Singapore-Style Banana Pie

Pisang power! A crisp, buttery pie shell filled with sliced ripe bananas, fragrant coconut-almond frangipane, and a generous sprinkle of crunchy chopped almonds.  A classic local flavour combination, decadent and irresistible.

3. Ayam Rendang Pot Pie

Mouthwateringly lemak ayam rendang featuring tender chicken pieces in a rich, luscious, lightly spicy coconut gravy, topped with a woven pastry lattice, then baked to a golden turn. Bring this to a potluck and wow everyone at the table.

4. Gula Melaka Egg Tarts

A local riff on daan tart, with thin crusts cradling a silky-smooth and aromatic gula melaka (coconut palm sugar) custard. Light, elegant and not too sweet.Adding wholegrain flours and grain flakes to your baking will amp up their nutrition, but equally importantly also boosts their flavour, aroma and textural appeal! Christopher’s latest recipes will teach you how to effectively use grains like wheat, rye and corn to improve your baking, with delicious results.
