If life turns a little topsy-turvy, focus on the upside – by which we mean, bake one of these yummy twists on classic upside-down cakes! If you find traditional versions too sweet and cloying, then try Christopher’s recipes, which put flavour far in front of sugar.

1. Pineapple & Lime Upside-Down Cake
Luscious caramelised fresh pineapple crowning tender, aromatic butter cake infused with two kinds of lime and vanilla, made the traditional American way in a cast iron skillet.
2. Pandan, Banana & Gula Melaka Upside-Down Cake
Soft and fragrant pandan butter cake, thick and succulent banana slices, and gooey palm sugar caramel, best eaten warm. Need we say more?
3. Blueberry, Maple & Rye Upside-Down Cake
Juicy, burst-in-the-mouth blueberries on top of a rich, moist cake made with maple syrup, toasted rye flour and sour cream for a nutty and intriguing flavour.
