1. Classic Sugee Cake
Christopher’s version of the traditional Eurasian wedding and birthday must-have cake, which has many different ‘cousins’ across Asia’s former Portuguese outposts – all sharing a rich and addictive family resemblance! Made with semolina, almonds, eggs and a generous amount of butter, it has a signature moist, melt-in-the-mouth texture.
2. Coffee Walnut Sugee Cake
Ground walnuts make this cake fragrant and ultra-tender, while their natural flavour partner coffee adds its delicious lilt. For even more oomph, drizzle over some coffee liqueur or serve it on the side.
3. Orange Sugee Cake
If you love citrus fruit and high tea equally, this is the sugee cake for you! Made with whole oranges, almonds and a dash of orange blossom water, its rich crumb is jam-packed with flavour (and high in fibre to boot), plus a bittersweet fragrance just like the best English marmalade.
